Guest Blog: Alison Henderson | Cooking fish outdoors

Alison has been showcasing her skills by cooking outdoors on an open fire using whole fish and different techniques. Please get in touch with Alison to go on one of her amazing forest foraging and woodland cooking courses. Who are we? We are Dave, Jules, Ali and Rob all good friends and are fire and food fanatics What do we do? We teach, make fire, forage, cook and entertain - in the Wild! Ingredients and the environment are hugely important to us and shape what we do and our ethos: local seasonal sustainable simple - the ingredients are the star of the show, not the wizardry of the chef On 4th August, Dave and Ali hosted ‘Fire & Feast #2’ - a full day, hands on workshop when participants learnt how to cook in the outdoors, deep in The Woods of East Lothian. James Dickson & Son promotional video

Pamela Zenati, one of the partners in our family business, has been working with Front Edge Media, an online content creation company, who are currently working on a large project with East Lothian Food and Drink BID, producing a number of videos showcasing each producer in the East Lothian region and ours is the first to be produced by Calum and his team. This video provides information on the top quality, fresh fish which we source from the Shetland's and promotes our specialty oak smoked salmon and haddock, which is smoked on the premises using methods handed down through the generations, since 1921.     Thanks to Calum and his team for putting together an excellent promotional video and we look forward to working with him again in the near future....

Launch of new brand and logo

We are delighted to announce the launch of our new brand and logo which has been designed to give us a unique identity in the fish industry and to make sure our customers can identify who we are. Our logo and brands in the past have been quite generic and dated, and as a business with a long distinguished history of delivering quality fresh and frozen fish to our customers in East and Midlothian since 1921, we felt that bringing our logo into the 21st century would enhance our reputation and give us a brand which we can be proud of. It has kindly been designed with the help of graphic designer Alex Dasi who has years of experience working in both Spain and in the UK. This incorporates our new brand colours to make sure we are consistent in all of our current and future promotional material and advertising. A massive thank you to Alex for his help and excellent advice. Find...
